Urban Pilón - Farm to Table Dinner
A farm-to-table carribbean flavor culinary experience w/ Urban Pilón
Are you ready for the third round of Farm to Table dinner with @urbanpilon? Link for tickets in our bio. The star of the Caribbean Culinary Experience will be the “pilón” or mortar and pestle. This ancient kitchen staple will be the centerpiece of our farm-to-table experience.
One of the main dishes we’ll be making with the pilón will be the delicious mofongo and its many variations.
What is mofongo? Garlicky fried and mashed plantain — sometimes mixed with other starches — often paired with soups and stews.
For some historical context, the mofongo from Puerto Rico, mangú from the Dominican Republic, and machuca from Central America all have its roots in Africa. They could be considered our interpretation of fufu made in Nigeria and Ghana.
Our word “mofongo” itself appears to stem from the Angolan Kikongo term “mfwenge-mfwenge”, which means a great amount of anything. Similarly, the noun “mfwongo” meaning “plate” or “flat surface”, is also found in another variant of spoken Kikongo.
